biscoff cookie cups

I mean come on, we all deserve to treat ourselves

ingredients

  • wake + flake blueberry almond granola

  • fresh blueberries and strawberries

  • 3/4 - 1 cup of crushed biscoff cookies

  • 1/2 cup of butter (earth balance vegan butter)

  • 1 cup of heavy cream (silk heavy whipping cream alternative)

  • 2 generous tablespoons of sugar
    * 1/2 teaspoon vanilla extract

steps

  1. crush biscoff cookies then add butter, mix until fully covered and add more crushed cookies if too wet

  2. put cookie mix into a cupcake pan and spread the mix to 3-4 cups making the bottom as thin as possible

  3. bake at 350 degrees F for ~15 mins

  4. whip heavy cream into a bowl then add vanilla extract. Pour in sugar slowly after the whip cream is thick.

  5. place in fridge to set for 3 hours or apply immediately

  6. take cookie cups out of the tray and top with granola, then the whip cream, then fresh fruit
